Cold-pressed juice bar business plans: the 4 basic models.

If you’re looking for a juice bar business plan, you’ve come to the right place.

In this article, I’ll go over the four basic business models for a cold-pressed juice bar / business:

  • Delivery Only
  • Retail Juice Bar
  • Combination

*Technically not a juice bar business, but worth considering.

I will give a high level overview of each business type and it’s pros and cons as I see them.

1. Delivery Only

Delivery juice businesses have the lowest startup cost, and are an OK place to start. Some of the most successful brands today have started this way.

This business model allows you to start small. I have met several owners of successful cold-pressed juice business that started by either making juice in a rented commissary kitchen (you can usually rent by the hour), or in some cases even making juice at home and delivering your orders from there. It’s worth pointing out that it may not be totally legal under FDA regulations to run a raw juice business from home. Many people have done it successfully and continue to do so, but just be aware that the FDA may tell you to stop and make you move to a real commercial kitchen at some point.

You can allow customers to place orders for juices and cleanses online to be delivered the next day. Or, if you have your production and inventory under control, you can deliver immediately.

You can build an ecommerce website very cheaply these days that can take order for juices and cleanses. If building an ecommerce website on a budget, I recommend starting with wix . The process really isn’t very complicated to get an ecommerce site up and running. You can also try to offer your products on local delivery apps like Uber eats .

Other than needing juice bar equipment , staff, and an ecommerce website, you will need to do some marketing. Facebook has amazingly targeted marketing these days, and it’s relatively cheap. You can, for example, advertise to people in your area who have “liked” photos and accounts related to health food, nutrition, and fitness. If your Instagram and Facebook game is on fleek  you should be able to fill a decent amount of orders, as long as the competition isn’t too high in your area.

Once you get some orders rolling you can invest in a larger production space and put some more money into a better website and marketing. Then, you can pivot to one of the more cost intensive juice bar business plans below.

2. Retail Juice Bar

Opening a brick and mortar store takes a much larger investment than a delivery only juice bar business. If you do it right though, having a retail store in a high traffic area can be great marketing for your brand. Customers can come in and “feel” what your brand is about. You can meet you customers, educate them about your products, and provide an experience beyond just selling a product.

These days, you need to do more than sell bottled juice out of a cooler. You will need to offer other beverages like smoothies and coffee, and you should offer some food items as well. The food can be simple grab-and-go items if you want to focus on the juice, but don’t take it lightly. Many of the businesses that only sell bottled juice are struggling or even closing their doors as the market has grown and customers have more options. This will continue to happen as more businesses get into fresh juice, like grocery stores and cafes.

When you grow to multiple locations, you will need to decide if you want to make your cold-pressed juice in each location, or produce it centrally in one kitchen then distribute out to your other stores. There are pros and cons with each model.

When making juice in a central location and distributing, you can reduce labor and equipment costs. With economies of scale, the more juice you can make in each batch, the cheaper it will be per ounce (there are exceptions).

The major challenge, however, is managing the inventory correctly so your stores are neither wasting juice that doesn’t sell, nor under-producing for demand. This is very difficult to do. Customers are unpredictable and something as simple as a rainy day can be devastating to a normal day of sales.

If you decide to juice in each location, you will need more equipment, and the labor costs will be slightly higher since you are making less juice per batch. There two major advantages with this method:

  • You can make juice as needed throughout the day so you will be left minimal wasted juice.
  • Customers appreciate the fact that their juice is fresh.

If the customer wonder if the juice has been sitting on a shelf for 3 days, they are less likely to buy. If they see juice being made, there is no doubt in their mind that the product they’re buying is fresh. A great example of successful juice business that makes juice fresh daily in each store is Cafe Gratitude .

3. Wholesale

( Note: This is not technically a juice bar business — it’s a juice factory business — but it is a plan worth considering.)

It’s hard to start small as a wholesale brand, so if you’re going to go wholesale, you probably need to go big out of the gate . This requires a big investment in marketing and a factory. There are a couple of major reasons for this:

When you are selling to 3rd parties for resale in the US, you must use HPP or another pasteurization method to achieve a 5 log kill, meaning you are ensuring that most of the potentially harmful pathogens have been killed. This means you either have to buy an HPP machine (expensive) or pay an HPP facility to process your juice for you, but normally they require a minimum order amount of thousands of bottles. Another major challenge is that you must let the re-seller make 30%-40% profit, meaning you have to sell to them at a discount. On the other hand, you don’t need to invest in brick and mortar stores so you can keep your overhead relatively low compared to owning a bunch of juice bars.

The ultimate goal here is to get picked up by regional and national grocery stores. There are a lot of grocery stores in every country. In the US alone there are over 40,000 grocery stores. Kroger and Albertsons each own about 2,000 stores. Getting into the national distribution network can be tricky, and you probably have to get in through a distributor like UNFI . If you can accomplish that, then the “juice is loose” as they say.

4. Combination

The most successful cold-pressed juice companies are usually doing all of the above. At least one brick and mortar store in a nice area to help with branding and marketing, a great e-commerce website to order juice, and a large wholesale network.

Hello Adeline, the First step for calculating wholesale pricing is making sure you know how much produce is going into each bottle and then determining your exact cost per bottle, From there you can factor in your labor, bottle cost, overhead, etc. As well as your food cost. Most operations will try to run a 20-30% food cost. Then for wholesale accounts, they might raise that up to 30-35%. Hi Cydnie! The method your describing has been done before, and some companies do it today. It's sort of gray area. Some health departments will say that as long as the juice is not being bought and re-sold that it's ok, but others will say no. Some will say you can do it, but you need to have your own POS device at the fridge so the money goes direct to your company. Some areas will even say it's ok to Wholesale the juice. It really all depends on the local health inspectors. The best thing to do is just reach out to the local health department and ask them.

According to what I've read, a 'Benefit Company' and a 'Restricted Professional Company' are specialized LLCs that can be formed at the time of filing or you may elect specialized status by amendment after the fact. Shieny, I think at 500 bottles per month you should stick to making raw juice and delivering it. We sell organic lemonades with infused simple syrups. No cold-pressed. We have a storefront and have been approached by a nationwide chain to sell "ready-to-drink" lemonades in a pet beverage bottle. Have you considered pasteurizing the lemonade before bottling instead of after? That might be the best solution. HPP may not be necessary.

HPP isn't necessary. HPP extends shelf life of juice from about 3 days to about 40 days. If you are delivering daily, no need for HPP!

HPP machines are all very big and very expensive ($500K+) due to the high pressure needed. Most companies pay a "HPP tolling facility" to process the product for them on a per bottle or per pound or product cost basis, for example $0.30 / per pound of juice.

I do not advise using a domestic / home juicer for a business. You will experience low efficiency and extreme frustration trying to run a business this way. Home juicers are not meant for commercial use, and will often break down and take you 5-10x the time to make your juice. Additionally, warranties on home juicers do not cover commercial use.

As everyone else, I began at home, juicing custom cleanses for friends and family of mine and it always has a great success. sebastian this is a common question and here's my answer: It’s not 100% true to say there is NO heat added. Of course there is a little heat from friction, but the produce passes through the grinder blade very quickly, and any added heat is not detectable. If you put cold produce in, you will get cold juice out. Compared to other juicers like centrifugal, that noticeably heat the juice due to the process.

I mean, is there no additional oxidation during grinding (of course this is less than a centrifugal juicer, but when compared with a screw juicer)? I haven't experimented to much with freezing juice, but I do know some juice freezes and thaws quite well like apple juice, but others may lose some qualities. I think the best approach is to make juice daily for the deliveries, then the customer is getting raw, fresh juice.

How to Write Your Juice Bar Business Plan

Are you wanting to start a juice bar business? You should, because it’s a clear avenue to capitalize on your qualifications as a health coach and Juice Guru® Certified Juice Therapist.

Juice bars can be easily set up and run to generate huge profits with minimal financial investment. But you need a plan to help you set goals and detail the steps on how you are going to accomplish them.

Benefits of a Business Plan

  • If you need to raise capital, you have something to show potential investors.
  • It will get you clear on all aspects of setting up the business, so you won’t come across any surprises.

Every good business plan starts with…an executive summary

But in reality, the best executive summary is done last. Why? Because it is a concise overview of what type of business you are, your product, market, location and unique selling position.

You need to have done the research for all the other sections before you create a summary of how your business is going to come to life.

If this plan is going to be used to source funding you need to make sure it is formulated and presented in a way that motivates the reader to continue reading. To do this, you can take the reader on a journey as they step inside the store or walk up to the van.

The most important thing to remember is that it’s not long. It’s only a summary of the elements and the detail that you will flesh out later in the plan. For a guide, it should be no more than a full page long.

Business Description

This section will lay out who you are, your target market, your competitive edge (Juice Guru® Certified Juice Therapist and health coach), and what product and service you are offering. Keep it to a few paragraphs and know that you will go into more details for each point you share in the sections below. You also need to explain your business model, the mode of service (in-store, deliver etc) the interior and customer experience and briefly mention the business owner or founders.

Like the executive summary, this description is best left until you have completed the rest of the plan.

The Business of Juice Bars

This is where you put in a brief description of the overall Juice bar business. Don’t assume that people understand the viability of this type of business. Reference annual revenue, and the key drivers of popularity in the industry. Explain to the reader how the current industry is going to relate to the success of your juice bar business.

Sales Plan and Strategy

This is where you must explain the models of service of your sales in depth. These can include in-store, takeaway, online orders, catering, delivery by the store, and delivery through third-party apps.

This is the section to mention your marketing strategy on how you are going to expose people to your product. Include marketing collaterals such as posters, flyers and brochures. You should also discuss your digital marketing strategy and the techniques you will utilize, such as website, social media and email marketing.

Spend some time outlining any strategic partnerships you have created, such as with gyms or fitness studios. You can also discuss how you will handle your in-house promotions, the informed selling strategy and loyalty rewards program to incentivize your customers to return.

Brand Concept

This is where you will have creative freedom – communicating what your company values are, and how they are expressed through your business concept.

You will need to flesh out what aspects of your brand that make your business unique. Outline the vision of your brand and what it represents. What are the values and how are you going to create that for your customers?

Your Competitive Advantage

What is your competitive advantage? If you are a health coach and Juice Guru® Certified Juice Therapist, this is your time to shine. If you have done other certifications, let people know. Don’t be shy in holding back.

If you have unique strategic partnerships with other business in the area, this is where you make sure they are documented.

You must show people that you have advantages over other business’ in your surrounding area.

Industry Outlook

This is not only good for investors but need to know information before you make any concrete decisions about opening up a juice bar business. You and your investors need to know where the industry is trending.

A lot of this information is online, the best quality information you will have to pay for.

Consider including the juice industry revenue statistics, growth projections, demographics research with customer avatars and patterns of buying habits. You can also discuss the technology that is aiding the industry and what advances if any are on the horizon.

Always put a predominate display of your key findings of the industry outlook in this section. Make them easy to read and relevant.

Relevant Market

Research the consumer market around the prospective location and break it down into neighbourhoods that surround the proposed location of the shopfront or van. Get a good indication of the demographics such as median age, median household income, male/female ratio, families with kids, unemployment rate. Anything that would impact on a juice bar revenue.

Then detail the prospective location – either the address or local region. Explain why you chose this address including the proximity to local wellness centers or gyms. Anything that would indicate why this is a good area for a juice bar business. For added emphasis you can add some photos of the area and the potential assets of why the market is ripe for your type of business.

Competitive Environment

This is the area where you need to clearly outline any direct or indirect competitors.

Direct competitors are considered to be within a two-mile radius and have a similar concept to your store. These would be other juice or smoothie businesses, acai bowl stores or juice vans. Include their name, what they sell, how long they have been in business, the average price point for their main product that is similar to your prospective business.

You should also include the indirect competitors within a two-mile radius of the proposed location. These are the businesses selling similar products as a part of their menus, such as cafes, coffee shops or other health food places. Include their name, what they sell, how long they have been in business and the average price point for their main item that is most similar to your business concept.

It is also good to show your key findings of this section and summarize it down into two or three bullet points.

Relevant Business Demographics

You should outline the yoga, Pilates, CrossFit and other fitness studios in the area. Detail the names and demographics they are focused towards. This will reveal your target market and prospective customers – namely health-conscious and active people with disposable income who are seeking fresh, healthy options to eat and drink. The longer the list of these types of businesses the better.

SWOT Analysis

This can be done as a bullet point list.

  • Strengths – outline the strengths of your business. Consider factors such as your unique concept, the location, business experience or qualifications.
  • Weaknesses – outline the weaknesses you foresee. This shows that you are thinking ahead. You can plan for these instead of being blind to them.
  • Opportunities – show that you are considering the opportunities in the area in how your company can grow.
  • Threats – what are the potential threats that can hinder your business success.

It’s important to share all these factors with potential investors upfront. They will ask the questions anyway. You can get ahead of the game and show that you have thought these issues through and aiming for long-term business success.

Management and Personnel

You should always have a biography of the owner or founders. Detail relevant personal information. What is your history and your vision for the business? Then drill down on your educational and professional background and how your skills can be transferred to the management of this business.

Then delegate the roles and responsibilities of the future hires from management through to the kitchen, clean and front of house crew team members. Indicate the experience requirements if needed, characteristics, the role description and key responsibilities.

Financial Assumptions

Make sure you put in the key financial assumptions of the juice bar business. This should show start-up costs of the storefront lease or van costs, build-out costs, licenses and permits, utilities deposit, equipment, menu creation, labor training, inventory, signage, marketing, etc.

Next, outline your payroll expenses and production costs.

Finally, give a breakdown of how many customers are going to have to come through the door and purchase to make your assumptions break even and profitable.

Financial Projections

Be conservative here. Know where your breakeven point is going to be and how long it is going to take to get there. What is your year-end net profit going to look like? Give a month-by-month projection for the first year. You should also indicate any financial projections into the next year, two years and beyond.

Milestone Schedule

This is a timeline of when the major steps that have to take place to launch your business. It will include the schedule for raising funds, organizing the lease, getting the relevant licenses, to the grand opening date.

Remember, you can find many templates on the internet that give you a base to work with and set out the information in a professional and easy to read manner. Utilize them. You don’t have to reinvent the wheel.

History of the Caribbean Mule

Although there’s plenty to love about the original Moscow Mule, variety is undeniably the spice of life. Thus, there is good reason to have a collection of recipes for your cocktails. With only a cabinet full of liquor from different parts of the world and a few basic ingredients, exploring with the Mule drink is like going on an adventure from the comfort of your home bar. 

Because the original Mule was named to pay homage to where vodka came from, Russia, its variations have followed the same idea. The Caribbean Mule takes the spirit of the enchanting blue waters of the Caribbean islands, combined with conventional ginger beer. 

With the Caribbean Mule, you can choose to use spiced rum, white rum, pineapple-flavored rum, or even coconut rum. The sweetness of the drink is livened up by the ginger flavors.

Caribbean Mule Ingredients

The ingredients in this variation are:

  • Rum – To achieve the best flavor, choose a premium quality rum.
  • Lime juice – Fresh lime juice balances out the sweetness and adds a tangy flavor.
  • Simple syrup – This can be made at home and is comprised of water, granulated sugar and, if you want to add a greater ginger kick, fresh slices of ginger.
  • Ginger beer – Choose a high-quality beer for the best results.
  • Ice – Use small crushed ice for heightened sensation and guaranteed chilling while drinking.

Which Rum Should You Use for your Caribbean Mule?

Spiced rum brings a comforting, warm feel that’s perfect during fall. When paired with ginger beer, the result is an extra sweetness and spice perfect for those cozy, cold nights or for entertaining your guests. Even when it comes to mixed drinks, you should always ensure you buy quality spiced rum. Preferably, use one with a medium to heavy texture. The flavors of the rum come out and help even out the ginger beer and simple syrup. 

You can also choose to use Red Leg rum. Red Leg spiced rum comes from the makers of Blavod, a premium vodka. The name is inspired by the red legged hermit crab that is indigenous to the coral reefs found in the Caribbean. The rum is infused with vanilla and ginger  and then rested in oak casks to marry all the spicy flavors. 

The Easy Caribbean Mule Cocktail

Ingredients:

  • 4 oz spiced rum
  • 2 small pieces of fresh ginger
  • 4 oz ginger beer
  • ¼ oz homemade ginger simple syrup
  • ¼ oz lime juice

Instructions:

  • Muddle the fresh ginger.
  • In a cocktail mixer, add the simple syrup, spiced rum, and lime juice and shake well.
  • Strain, then add ginger beer to create that absolutely delicious spicy cocktail. 

Pirate Inspired Caribbean Mule

This cocktail will transport you to the ocean blue waters of the dreamy Caribbean from wherever you are in the world. 

  • ½ oz white rum
  • ½ oz gold rum
  • 1 oz coconut rum
  • Pineapple wedge
  • Mix all the rums.
  • Add ginger beer, then stir gently.
  • Serve in a classic copper mule mug over ice and garnish with the pineapple wedge.

The Kranks’ Caribbean Mule

This easy-to-make Caribbean style cocktail is one tasty treat. It draws its inspiration from a holiday favorite, ‘Christmas with the Kranks.’ In the movie, a couple whose kids are all grown up and have left home go merry-making on a Caribbean holiday cruise. This particular cocktail uses cranberry syrup, which gives the drink a distinctive twist.

  • 4 fresh cranberries chopped
  • 2 sprigs fresh rosemary
  • 12 oz ginger beer
  • ½ cup white sugar
  • ½ cup water
  • 1 oz fresh lime juice
  • 2 slices lime
  • Ice as needed 
  • Put the water, sugar, and chopped cranberries in a saucepan and cook over very low heat.
  • Stir frequently until the cranberries are completely soft.
  • Use a fine-mesh sieve to strain the mixture. Press the pulp gently to extract the liquid.
  • Let the syrup cool for about 20 minutes at room temperature. Cover the syrup and put it in the refrigerator for about 30 minutes before use.
  • Pour ½ oz of lime juice and 1 tablespoon of the cooled syrup into two Collins glasses or copper mugs.
  • Add ice, then pour rum and ginger beer in equal amounts and stir using a cocktail stirrer.
  • Garnish with cranberries, a lime wheel, and rosemary sprig.

Bright Caribbean Cocktail

This low-carb cocktail is bright enough to make you forget a chilly and dull day outside your window. It’s also perfect for weekend entertaining. Besides, you get to enjoy all the goodness of a low-carb  drink which lets you indulge while also helping you in the weight management department!

  • 1 1/8-inch slice of fresh ginger
  • ¼ teaspoon of pineapple coconut water enhancer
  • 4 oz sugar-free ginger beer
  • 1 oz pineapple rum
  • Frozen cranberries
  • 1/2 oz lime juice
  • 2 oz club soda
  • Muddle the ginger in the bottom of your cocktail mixer.
  • Fill with ice.
  • Add all the rum, water enhancer, and lime juice. Shake well.
  • Put the mixture in a glass and add the club soda and ginger beer
  • Garnish using the frozen cranberries and serve immediately.

The result is a sparkly cocktail that is ideal for weekend sipping. If you prefer your drinks a little sweeter and a bit heavier, then add more ginger beer.

Ginger Peach Fizz

The dark rum used has a flavor that perfectly complements the peaches  in this utterly amazing cocktail.

  • 1 ½ oz dark rum
  • ¾ oz simple syrup
  • ¾ oz lime juice
  • 2 slices of peach
  • Muddle peach slices in a cocktail shaker.
  • Add ice, lime juice, rum, and simple syrup, then shake.
  • Strain mixture in a highball glass and top with ice.
  • Fill the glass with ginger beer and stir.
  • Use the mint sprig to garnish.

Which One Should You Use: Ginger Beer or Ginger Ale?

Although it’s possible to use ginger ale instead of ginger beer in your Caribbean Mule cocktails, you won’t achieve the depth of ginger flavor, which is what makes ginger beer such a great mixer. Ginger beer is actually fermented and has a sharper, more pronounced ginger flavor and almost .05 percent alcohol. Besides, it’s less carbonated compared to ginger ale .

Making Homemade Simple Syrup

Simple syrup is a mixture of sugar and water that’s dissolved and then cooled. The ideal ratio should be 1:1.

To make a ginger simple syrup, you should mix a few fresh slices of ginger with water and sugar and put it in a small saucepan. Then, place it over medium heat and cook for about 5 minutes. Once the sugar has dissolved, remove from the heat and allow to cool.

Should You Make Your Own Simple Syrup or Use A Store-Bought One?

Even if you're a novice, making your own homemade spiced Caribbean Mule with your own simple syrup is very easy. The advantage of making your own is you can control the sweetness and flavor when cooking. For instance, adding extra ginger will give your drink more punch. On the other hand, if you need a faster drink, then store-bought simple syrup is your best bet. However, it will not have as much ginger flavor. 

Get Creative

Does the idea of rum and ginger beer sound fascinating? Rather than just following a specific recipe, take a tall glass and fill it with ice to the brim. Next, pour a shot of rum or two. Add ginger beer to the ice and rum until you find the balance that perfectly suits your palate.
